I went to the pre-launch party and as usual. The gantry did not disappoint! I'm tempted to visit over the bank holiday weekend for some more of their mouth watering pizza.
You have to try it to understand. The truffle, mushroom and cheese. The Margherita. I can't choose a favourite. I find that the best pizza is always made with focaccia bread, so maybe that's the secret.
Don't worry about the weather either. With blankets, indoor seating and two outdoor fireplaces to keep you warm if the sun does not.

The history of Islay dry gin
Step back in time to the rugged and windswept shores of Islay, where the history of Islay dry gin begins. This small Scottish island has long been revered for its rich distilling heritage, dating back centuries. As early as the 17th century, enterprising locals began experimenting with botanicals found on their doorstep to create unique spirits.
The isolation and wild beauty of Islay played a pivotal role in shaping the character of its gin. The harsh climate and unique terroir influenced both the choice of ingredients and production methods used by distillers throughout history.
Over time, Islay's reputation for producing exceptional whiskies spread far and wide. However, it wasn't until recent years that this picturesque island started gaining recognition for its outstanding gins as well. Today, Islay dry gin stands as a testament to the island's innovative spirit and dedication to craftsmanship.
Drawing inspiration from ancient recipes passed down through generations, modern-day distillers combine traditional techniques with contemporary flair. They carefully select an array of botanicals native to Islay - including juniper berries, coriander seeds, citrus peels, angelica root - each chosen for their distinctive flavors and aromas.
This harmonious blend is then infused into pure grain spirit before undergoing a meticulous distillation process that captures every nuance of flavor. From copper pot stills to vapour infusion techniques – these skilled artisans masterfully transform raw ingredients into liquid artistry.
As you savor each sip of Islay dry gin, you'll be greeted with a symphony of taste sensations dancing across your palate. The juniper takes center stage with bold intensity while floral notes delicately intermingle on your tongue. Zesty citrus bursts add vibrancy while earthy undertones offer depth and complexity.
Whether enjoyed neat or mixed into imaginative cocktails bursting with creativity – there's no denying that every drop encapsulates the essence of this remarkable Scottish island. Islay dry gin is not just a drink; it's an experience
The botanical ingredients in Islay dry gin
The botanical ingredients in Islay dry gin are what give this spirit its distinct and flavorful character. Each ingredient is carefully selected to create a harmonious blend of flavors that sets Islay gin apart from other gins on the market.
One of the key botanicals used in Islay dry gin is juniper berries. These small, dark purple berries provide the classic piney aroma and taste that is characteristic of gin. They are hand-picked and added during the distillation process to infuse the spirit with their unique flavor profile.
Another important botanical in Islay dry gin is coriander seeds. These seeds have a citrusy, slightly spicy flavor that adds depth and complexity to the overall taste of the gin. They work in tandem with other ingredients to create a well-rounded flavor profile.
Angelica root is also commonly found in Islay dry gin. This botanical provides earthy notes and helps balance out the flavors of other ingredients, ensuring a smooth and enjoyable drinking experience.
Other botanicals often found in Islay dry gin include lemon peel, orange peel, orris root, cassia bark, and licorice root. Each ingredient contributes its own unique qualities to create a complex yet balanced flavor profile.
By combining these carefully chosen botanicals, Islay dry gin offers drinkers a truly distinctive taste experience that showcases both traditional elements as well as innovative twists on classic flavors
How Islay dry gin is made
Crafting Islay dry gin is a meticulous process that requires expertise and attention to detail. It all starts with the selection of high-quality botanical ingredients, each chosen for their unique flavors and aromas. From juniper berries to coriander seeds, every ingredient plays a crucial role in creating the distinctive taste of this beloved spirit.
Once the botanicals are carefully selected, they are macerated in a neutral grain spirit. This allows the flavors and essential oils from the botanicals to infuse into the liquid, imparting their distinct characteristics. The maceration process can take anywhere from several hours to days, depending on desired intensity.
After maceration, distillation takes place in traditional copper pot stills. Heat is applied to separate alcohol vapors from impurities and unwanted compounds through evaporation and condensation. This results in a smooth, refined spirit with concentrated flavors.
To add even more complexity to Islay dry gin, some distillers incorporate additional botanicals during distillation or utilize different types of stills for multiple distillations. These techniques contribute to creating an intricately layered flavor profile.
The final step involves diluting the distilled spirit with pure water until it reaches its desired strength before bottling. Each batch is meticulously tasted by master distillers who ensure consistency and quality throughout every bottle produced.
Crafting Islay dry gin involves selecting premium botanical ingredients followed by maceration, careful distillation using copper pot stills for purity and complexity, and finally dilution with water before bottling – resulting in a truly exceptional drinking experience!
